On the Canadian Province of Prince Edward Island, horses have been used to pull harvesting rakes through the intertidal zone at high tide to gather Irish moss.
This image was captured near Tignish, looking out across the Gulf of St. Lawrence in the area where there are still pockets of Moss harvesting. The horse pictured here is probably not a candidate to swim the ocean currents and pull the harvesting rakes. I understand that instead, the locals use large draft horses like Friesians, Clydesdales, Belgians, or Percherons
The carrageenans in Irish moss are prized for their gelling, thickening, and stabilizing properties for everything from pudding and ice cream to shampoo and toothpaste.
Sadly, too, an invasive seaweed has lately comingled with the Irish moss rendering the harvest less viable.
