Our mid-July visit to Southwestern Montana included plenty of back-road exploration. We encountered these photo-worthy puffy seedheads which brought me to research what they might be. Wikipedia and Montana State University provided plenty of information about western salsify or tragopogon dubius -- and similar to the species tragopogon pratensis. There are plenty of common names for this plant including Wild Oysterplant, yellow salsify, yellow goatsbeard, western goatsbeard, western salsify, Moscow salsify and the whimsical name jack-go-to-bed-at-noon. The young roots of the plant are edible and in former times children used the sap to produce chewing gum. All the various names aside, Montana meadow goat's beard is picturesque in its seedhead stage and we spent plenty of time lying prostrate along roadside ditches trying to get just the right shot.
